Pumpkin-flavored favorites for fall

It’s that time of year again when Starbucks and Yogurtland begin to pull out their big-stops: pumpkin-flavored products. Even Jamba Juice on campus has its seasonal “Pumpkin Smash” smoothie.

Expert and amateur cooks around campus have shared great ideas for fall-inspired pumpkin recipes.

Christine Moore, a professor in BYU’s School of Family Life, makes her own version of Jamba Juice’s pumpkin smoothie.

“It just takes three simple ingredients,” Moore said. “I blend together a fourth cup of pumpkin, a cup of ice cream and ice. There, you have a delicious fall treat.”

Moore also suggested making pumpkin french toast, pumpkin fudge and pumpkin soup. She also described pumpkin’s health benefits.

“Pumpkins have great nutrients and vitamins in them,” Moore said. “They are especially heavy in vitamin A and iron. They are versatile for baking and add excellent flavor to almost any dish.”

Elizabeth Lin, a recent graduate from BYU, enjoys baking and cooking seasonal dishes. “One of my favorites for fall is pumpkin-spice baked donuts,” Lin said. “Make sure you pipe the donut batter into the donut pan. It’s easy, clean and fast. Also, never forget the pumpkin pie spice.”

Don’t drink coffee? That’s alright. Rebekah Elton, a senior at BYU, has ideas for ordering at coffee shops or making a warm drink. “Pumpkin-spice milk steamers are perfect for a cozy fall day,” Elton said. “You can just order steamed milk at a coffee shop and have them add pumpkin-flavor syrup, or even make the same at your house.”

For those looking for more fall food ideas, Moore suggested a cookbook by Jessica Seinfeld called “Deceptively Delicious” for a variety of great pumpkin recipes and other favorite fall-time flavors.
